It was at noon of a scorching day in mid-June, 2020. At the Yushi Community Development Association's Activity Center in Caotun Town, Nantou, the whole space was permeated with the aroma of food. More than forty elders in the community were attentively watching a group of young people, who are wearing white chef uniforms, lugging dining trolleys full of a variety of dishes, and preparing to stage a wonderful "culinary show." After the aromatic and delicious food was served, the elders began to enjoy the meals which are carefully prepared for them. This is indeed a healthy and delicious feast!
This group of young people, who are students of Department of Food and Beverage Management of Nankai University of Technology, developed and prepared the low-GI (low glycemic index) food for the elderly under the direction of Dr. Zhengzhi Liu, an Associate Professor with the same department. Talking about the planning for this event, he said that there were two types of menus, vegetarian and non-vegetarian. The former is cabbage rice meal box, while the latter grilled pork shoulder butt chops with quinoa rice. He said that the materials in the ingredients, such as okra, meat, and eggs, are all fresh. Combined with healthy and fresh cooking methods, these Mediterranean dishes cause no burden to the body and have a low GI, making them a healthy diet to prevent blood sugar from rising.
"We often face a dilemma of balancing taste and healthy when designing a recipe for the elderly people," said Ms. Yang Yuping, Chairperson of Bifeng Community, Caotun Town. She pointed out that the diet of the elderly in rural areas is usually unhealthy for various reasons. They often did not pay much attention to the ingredients and cooking methods. For example, it is difficult for them to buy fresh ingredients due to their poor mobility. They might occasionally go to traditional markets and simply buy a lot of salted fish, which leads to malnutrition. Some elderly people can only eat porridge because their teeth have weakened chewing function. However, eating porridge causes high blood sugar. Ms. Chen Nixuan, director-general of the Yushi Community Development Association, Caotun Town, expresses the same opinion. She said that most of the elderly in local communities have the "three high" states, that is, high blood sugar, high blood pressure, and high blood lipids. Since elderly people living alone often cook on their own, more nutrition awareness is required to help them age healthily.
Nankai University of Technology proposes a University Social Responsibility (USR) program in 2019, which stresses the collaborations of on-campus teachers with expertise in nutrition and culinary skills and the combination of related courses. By surveying the needs of seniors' meals, a tailor-made recipe for the local senior citizens has been developed. The goal of the event is not only to bring the elders both healthy and delicious dishes by the teachers and students of Nankai University of Technology but also to convey essential knowledge of "diet therapy" to the community.
Ms. Zeng Dunxiang, an elder from the community who participated in this food review, likes these healthy dishes very much. She said that they are neither salty nor oily. Zhang Zhengxin, a student from the Food and Beverage Management Department who participated in the design and production of this meal, said that the key is to reduce oil and salt, try not to fry, maintain the original taste of the food and lower the glycemic index. The menu is delicately designed, for example, replacing white rice with quinoa rice. He also said that he has gained valuable experience in making such a large amount of meals for this event. In particular, many trials and errors during the process have taught him some remarkable lessons.
This event was a part of Nankai's USR Program "Building a Sustainable-Aging Town in Nantou," which is funded by the Ministry of Education. The program is headed by Dr. Sheu Tsong-Shin, President of Nankai University of Technology. His core philosophy is to build Nankai into a system of "people and society symbiosis" and to make Nankai "a partner for the advancement of the local community." Consequently, Nankai University Social Responsibility Program focuses on promoting the "quality aging" of the community and cares about the physical health, mental health, social participation, social security, spiritual pursuit, and self-realization needs of local elders. In addition to offering low-GI and healthy cuisine, Nankai also engages in safety inspections of the electric scooters for the elderly people in the community to improve their travel safety and convenience. Other activities, such as combined Youth-Elder Lohas courses, physical fitness aerobic exercise, brain cognitive gymnastics, are also held to promote the physical health, mental health and even social participation of the elderly. At the same time, a group of teachers and students are jointly compiling the life stories of Taiwanese opera masters in community, making life picture books and filming micro movies to record the passionate stories of a group of community elders who devote themselves to cultural heritage. These joint efforts and consequent achievements suitably demonstrate the realization of "University Social Responsibility" shouldered by Nankai University of Technology.
